Sweetcorn fritters

Ten minutes preparation and 20 minutes cooking for these delicate, moreish fritters that are the perfect partner to  a young Chablis wine.

200 g corn, drained
125 g flour
1 tsp baking soda
1 egg
¼ of a lemon
Chives, finely chopped
Sunflower oil, salt and pepper
For serving, an Asian bitter-sweet or a tex-mex sauce

 Chablis (recent vintage)

Choose a young Chablis - it will bring more depth and freshness to the dish. Its intense fruity, fresh, and lemony notes are a wonderful contrast for fritters. Sweet corn has nothing to do with the variety of corn used for popcorn! Used as a vegetable, this corn brings a delicate, soft and gentle taste that combines itself beautifully with the mineral elegance and liveliness of Chablis. 

METHOD

In a large bowl, prepare the batter by adding the following ingredients: flower, salt, pepper and baking soda.


Then add the egg and the lemon juice. Mix slowly, adding water if necessary. When it is smooth, add the corn and the chives.


In a large skillet, heat the oil. When it is hot, working in batches, drop batter by the tablespoon into the oil. Cook, turning occasionally, until they are crispy and deep-golden brown. Transfer fritters to a paper-towel-lined baking sheet.

 

Season to taste with salt, and serve immediately.

Make the batter spicier by adding some cumin or paprika!
