Oysters, cucumber, and yuzu

Oysters and Chablis are a perfect match. It is almost unimaginable to have one without the other and here is another simple and effective recipe that proves it. To be enjoyed as an aperitif with friends or family.

List of ingredients

Serves four



3 tbsp yuzu or lime juice
1 tsp sesame oil
2 tsp olive oil
2 tbsp diced cucumber
1 tbsp finely chopped shallots
12 good-sized oysters
Crushed ice


Yuzu can sometimes be found at your local grocery store, or in bottles in your local Asian supermarket. If you can't find it, substitute it with lime juice.

 Chablis

The yuzu brings character and vigor to the delicate flesh and iodine notes of the oysters.
A Chablis is the perfect accompaniment to this aperitif, bringing the freshness and minerality it needs.

Method

Make a vinaigrette by combining the yuzu with the sesame and olive oil.
Mix in the diced cucumber and shallot.


Open the oysters.

 

Drizzle with the dressing and serve immediately over crushed ice.
