French Fried Sweet Potato with Mozzarella

Sommelier’s tip

 Petit Chablis

In terms of texture, the crunchiness of the sweet potato contrasts with the smoothness of the mozzarella. With regard to flavor, sweetness prevails, enhanced by the maple syrup. A fresh and lively Petit Chablis would accompany this autumnal dish with simplicity and elegance.

METHOD

Cut the sweet potatoes into 5cm slices and then slice these into French fries.


Tear the mozzarella into bite-sized pieces.


Heat 60ml of oil in a pan until hot and then add the sweet potatoes and fry until golden.


Arrange them in a dish with the mozzarella, drizzle two tablespoons of maple syrup on top and then grind over the black pepper.
